1-Pan Brown Rice with Spinach and Mushrooms
Instructions
- Heat up some oil in a deep pan and brown the onions for about 2-3 minutes
- Add the mushrooms, thyme and half the oregano. Stir the mixture well and add salt and pepper to taste.
- Add the pre-cooked rice along with the vegan cream cheese and mix everything into creamy looking rice. While mixing, add spinach periodically and let it shrink as you stir.
- Done! Serve the meal in wide bowls and garnish it with the rest of the oregano and almonds.
Recipe Notes
Tip: Instead of seasonal mix mushrooms you can also use 100g shiitake and 100g chestnut mushrooms. If you do so, just chop the mushrooms in half.
