Plant-based apple pie with walnuts and raisins
This is a completely vegan recipe that uses linseed soaked in water to replace eggs. Combining cinnamon, walnuts, and raisins with sweet apples create a fantastic flavour which is perfect on a cold autumn afternoon with a cup of tea.
Set aside a peaceful hour on a Sunday to bake this delicious recipe and sit back and enjoy the fruits of your labor as you tuck into a slice.
Instructions
- In a bowl, mix the linseed together with warm water (2.5 tablespoons of hot water per tablespoon of linseed) and let the seeds soak for at least 10 minutes.
- Grind the oatmeal with a blender or food processor into a fine flour. Add the baking powder, two-thirds of the sugar and a pinch of salt and stir everything well.
- Blend the banana and sunflower oil until you have a smooth mixture.
- Add the oil-banana mixture and the linseed egg to the dry ingredients (oatmeal) and knead everything with your hands until a dough has been formed. Wrap the dough in foil and put it in the fridge.
- Preheat the oven to 180 degrees.
- Soak the raisins in warm water for at least 5 minutes.
- Peel the apples and cut them into cubes of approximately 1 cm. Mix the apple pieces well with the raisins, lemon juice, cinnamon, the chopped walnuts and the rest of the sugar.
- Take the dough from the fridge and dust the counter with some flour. Roll the dough with a rolling pin (or tall glass) until it's flat and place it in a cake tin that has been greased with sunflower oil. Press it firmly into the tin and pour in the apple-raisin mixture.
- Bake the pie for 60 minutes.
