Fruit salad with soya yogurt
Start the day with the tastiest fruit and a topping of soy yogurt. Perfect for a summer’s day, but also to boost your mood on a drizzly day! Delicious as a breakfast or as a healthy snack; full of vitamins, filling because of the soya yogurt, with freshness from the mint leaves and the lime juice.

  • 500 g soya yogurt
  • 5 tbsp agave syrup optional
  • 200 g pineapple
  • 250 g strawberries
  • 250 g blueberries
  • 1 banana
  • 1 lime
  • 1 handful mint leaves

Instructions
  1. Peel the pineapple and cut it into cubes. Halve the strawberries and cut the banana into thin slices.

  3. If desired, mix the agave syrup into the soya yogurt (or leave unsweetened), and serve the fruit salad with the yogurt.
Recipe Notes

Variation tip: Finely chop 100 grams of almonds with a large knife or in a food processor. Then mix the almonds with 200 grams of soy yogurt, two tablespoons of agave syrup (or maple syrup) and one teaspoon of cinnamon. In the fruit salad, omit the mint and replace the pineapple with two oranges, and the blueberries with one apple. Enjoy!
