Kenyan Sponge Cake
Instructions
- Preheat the oven to 180 degrees.
- Grease and line a 20cm cake tin.
- Sift the flour and baking powder.
- Add the egg alternative, sugar and cardamom and beat until fluffy (until the volume doubles).
- Add the flour gradually and fold in carefully.
- Spoon the mixture into the tin.
- Bake for around 20 minutes until a toothpick inserted in the middle comes out clean.
- Leave to cool.
