Ingredients
  • 1 ½ cups green, black, or brown lentils, rinsed
  • 4 cups Very Easy Vegetable Broth (page 14 of latest book) or store bought
  • 1 medium yellow onion, diced
  • 1 tsp minced garlic (2 cloves)
  • 1 tsp minced jalapeño pepper (optional)
  • 1/2 tsp salt, plus more for seasoning (optional)
  • freshly ground black pepper

Instructions
  1. Combine the lentils, vegetable broth, onion, garlic, jalapeño (if using), and salt in a slow cooker; mix well.
  2. Cover and cook on low for 6 to 8 hours. Season with salt (if using) and pepper.
