Peanut Butter Cookies
Peanut butter lovers will enjoy the rich pure flavor of peanuts in these cookies. For variety, you can substitute another nut butter, such as almond or cashew butter, or add 1⁄2 cup of semisweet chocolate chips to the batter.

  • ¾ cup creamy peanut butter
  • 1⁄2 cup vegan margarine
  • 1⁄2 cup sugar
  • 3 tablespoons water
  • 1 teaspoon pure vanilla extract
  • 2 1⁄2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1⁄4 teaspoon salt

  • 1 tablespoon baking powder
  • 1⁄4 teaspoon salt
Instructions
  1. In a large bowl, combine the peanut butter, margarine, sugar, water, and vanilla and mix until well blended. Add the flour, baking powder, and salt and stir well to form a smooth dough. Cover and chill until firm, about 1 hour.
  2. Preheat the oven to 350°F. Roll out the dough on a lightly floured work surface to a 1⁄4 inch thickness. Cut into shapes with cookie cutters or the rim of a small drinking glass. Use a metal spatula to transfer the cookies to an unreleased baking sheet.
  3. Bake until lightly browned at the edges, 8 to 10 minutes. Cool the cookies slightly before transferring to a wire rack to cool completely. Store in an airtight container.
