Vegan Scones made with Coconut Cream
This Vegan Scones recipe turns out light and savory scones. Coconut cream scones are a perfect side dish at dinnertime or at breakfast with jam.

  • 4 cups whole wheat pastry flour
  • 2 tablespoons coconut sugar
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 2 1/4 cup coconut cream from a can not a carton
  • 1/4 cup dairy free butter, melted for brushing the tops of the scones

Instructions
  1. Grease a baking sheet.
  2. Combine the flour, salt, baking powder, and sugar.
  3. Add the cream stirring until just moistened.
  4. Add a little bit more flour if it seems way too sticky.
  5. Turn out onto a floured surface.
  6. Roll the dough to a 1/2 thickness.
  7. Cut with a biscuit cutter. Place on greased baking sheets.
  8. Brush with the melted butter.
  9. Bake at 425° for 12 to 14 minutes. Cool on a rack.
